Brussels Sprouts in Tahini Sauce

 

This is a great, tasty recipe.  We’ve found even people who don’t like sprouts enjoy them when they are cooked like this.  You get all the goodness of a green vegetable combined with the benefits of sesame seeds which contain iron and several other minerals.  Serves 4

 

Ingredients

750g Sprouts

50g vegan marg

1 onion – finely chopped

1 clove garlic – crushed

25g plain flour

4tbsp Tahini paste

½ vegan stock cube – crumbled

350ml orange juice

150ml water

Seasoning

Sesame seeds and orange twists to garnish

 

Method

Wash and trim the sprouts removing any tough outer leaves – cut a cross in the stem of each sprout.  Cook them in a pan of boiling water for 8-10 minutes until al dente.

Make the sauce by melting the marg and gently frying the onion and garlic for about 5 minutes until soft and lightly browned.  Sprinkle in the flour and stir over a gentle heat for 3 minutes.  Add the tahini and the stock cube and stir until smooth.  Gradually stir in the orange juice and water and simmer until the sauce is thick and smooth. 

Drain the sprouts, move them to a warmed serving dish and pour the sauce over them.  Sprinkle with sesame seeds and orange twists then serve immediately.
